Sponge Biscuit

  • 30 g white eggs
  • 17g granulated sugar
  • 15g yolks
  • 10g stach
  • 10g all purpose flour

with this recipe you should gent enough for 2 biscuits or a thick one

  • Whip the egg white and add the sugar little by little when it starts to get foamy
  • When they are ferm add quickly the yolks and beat again
  • Incorporate gently the flour and the stach

2 techniques

  • 1. Pastry bag: Pour the mix into a pastry bag with a round 8 mm tip and pipe a your biscuit in spiral over a parchement pape sheet
  • 2. Round mold: Pour the mix into a round mold smaller than your piep an. Depending how wide is your mold do not pour to much dough into it. The mix will rise while baking and you would have to much biscuit in your pan.
  • Bake for 10 mins at 200ºC
